The Science

Cacao was never meant to be processed.

Most cocoa on the shelf is alkalized — bathed in potassium carbonate in a process called Dutching. Companies do it for three reasons, and none of them are about you: it darkens the color for a richer look, it smooths the bitter edge into something uniform, and it extends shelf life.

The problem is what alkalizing takes with it. Studies have measured losses of up to 60–90% of cacao's flavanols — the very antioxidants behind its benefits for circulation, focus and mood. You are left with the color of cacao and almost none of the substance.

COR does the opposite. We ferment and sun-dry at origin, then cold-mill the raw bean into powder. No alkali. No high-heat roast. No compromise. The bitterness you taste is the benefit, intact.
